Either is fine. Mine was on college letterhead, stamped. Although classes are not being held in college, professors are still permitted to enter the premises, so I requested him to for the same.

I submitted one academic, and one professional(internship) LOR.
Okay, so I was pretty nervous about the video interviews, but they give you a few practice rounds so as to understand and feel comfortable with the process. I had almost messed up my first answer, but caught up pretty soon and I didn't even realise it got over so soon. There were around five questions.
If you're comfortable talking to yourself in the mirror, then it's super easy. This is the only way it's different from normal(skype) interviews. The content remains the same usually, about the work you've done, leadership positions, handling difficult scenarios, multitasking etc.
I'd say, be prepared for the answers with examples, and practice by looking in the mirror and answering the questions, before actually recording the interview.
If you have any other trick up your sleeve, which helps you, do try it. You'll have around one week's time to record the interview once you receive the invitation. Don't get into your head and you'll be fine
