Getting rehired after the Peace Corps is a vote of confidence from former employer, but there still is a lot of hopping around. If you can explain it and make clear that you weren't forced to hop around because of issues with successive employers, you'll be doing well.

The GRE addresses concerns about a possible lack of quant skills, but it doesn't address the jumping around in terms of your jobs.

I think you have chosen well and don't believe you need to go further down the food chain, but you are hard to predict.
