I did underwater videography for the BBC for some time. I'm involved in a local softball league, I am on the Northwestern Alumni Admissions Board (we interview candidates, help them decide, etc), I am the class representative for my high school and help plan fund raising events, etc.

It all seems a little, well, boring.

Congrats on the 730! That's quite an improvement. Extracurricular activities is anything from hobbies (helpful to extent they are unusual and show your passion when committed to something) to community/volunteering activities. The underwatr videography sounds like a potentially great essay, as does the home-building on Honduras. The softball league is not essay material (unless you're coaching kids or something), but the NU alumni work is good material--if not for a full essay then at least as a paragraph or two somewhere. The high school alumni stuff doesn't add much value, but should of course be listed in your application.

Bottom line: any extracurricular or community activity that shows you leading and getting results by doing so is good material.
