You are correct that you need stellar work experience and a high GMAT because of your low GPA. Some post bac A's would also help you.

If you apply after two years, you can certainly still use your college extra-curricular activities but you should also try to maintain or develop some community service activities or hobbies even while working. The schools won't expect the same volume, but try for at least something on a limited basis if your work is demanding.
