As you know, if you're focused on IB recruiting, then you should limit your schools to the top 16 (and you did). You may also want to look at a few Euro schools as well (if you're interested in working in London).
In any case, here's what I suggest:
Stretch: Columbia, Booth (choose 1 or both)
Semi-stretch: LBS, INSEAD
Sweet spot: Yale, NYU, Cornell (choose all 3)
Safety: Oxford, Cambridge
Whether you apply to the Euro schools comes down to whether you want to work in London post-MBA in IB (which can be a good alternative to NY, especially if you want a more global experience in terms of deal flow). In any case, these schools are the strongest for finance recruiting, and schools where you have a shot of getting into. As you know, NOT being an IT/engineering guy certainly helps.
Beyond that, it comes down to how well you execute your applications, and obviously a bit of luck (as it would be for any applicant).
