Hi,
I need advice for my profile:

Age: 32
Nationality: Italian
Degree: Undergraduate degree in Marketing grade 101/110 and Postgraduate 1 year course in Economic Statistic grade 108/110 - I have an 'hole' of one year in my undergraduate studies, I was not very motivated at the time, so in the end it took me five years to complete a three year course. This is my first weakness. But it happened ten years ago.
GMAT 760 with 50Q - 45V - IR 8 but AWA only 4,0 , I can write in english but it took me a lot of time during the test and I could not organize the answer in terms of structure/expected template
Work Experience: I worked for 7 years as a Consultant working for a Software Developing firm. It is a small (20 employee) Italian firm, but I had pretty good clients I can talk about. Since the firm is completely flat I never had promotions (but raises and benefits like a company car, bonuses etc)
I have no extracurriculars to talk about since they are not part of our educational system and I had other interest, like creative writing, photography, all activities that you do by yourself. I played volleyball in high school and university but I was not a particularly accomplished player.

I am particularly interested in continuing working in software/technology as a Product/Project Manager
I already applied to Sloan, Stanford, Haas, UCLA
I know that most of these schools are long shots so I am beginning to think about which schools I can target for R2, I was thinking McCombs, Tepper, maybe Ross?
Can you think of other schools that I can target "safely" with my profile and that are in line with my post MBA interests?

Thanks for sharing your profile, you have a few holes in your profile such as your undergraduate record and lack of extra-curriculars. Your GMAT is very strong which should have you on the radar of some schools. An ideal school for what you are trying to do career wise is Kellogg. The school has a great track record producing product managers with a nice pipeline with companies like Amazon, Microsoft and Google. I think Ross is also another school that would make sense given your career goals. Both school really care about students who have a track record of engagement via extra-curriculars. I would try and play up your personal passions incorporating doing these activities for others that showcases this aspect of your profile. You will really have unleash a strong fit story and do your research on the schools identifying specific programs that will allow you to reach your career goals.

Regarding Kellogg, I would also be open to the one year program, since I have a business (marketing) degree and I'm 32, so this can be an interesting choice for round 2 app.
I don't find statistics about the one year program. Is it more difficult to get into this program?
I am not sure I am not a career switcher though, I have a marketing degree and I have worked in technology but not doing marketing, while I would like to do technology product managment...

Kellogg's working line is that selectivity is consistent across all of its programs. I will say that the 1Y program tends to have a very high caliber of students, it is filled with tons of ex-MBB consultants so you can imagine the pedigree, GPA, GMAT score coming from this crop of applicants. This program is largely geared towards non-career switchers given the lack of a true summer internship opportunity so keep that in mind as you identify programs that make the most sense for your career goals.
