It is really up to each individual admissions committee. Most admissions committees will have you list any and all activities during your undergraduate and postgraduate career -- this includes internships. For schools that tend to skew younger, they will more heavily focusing consider your undergraduate work experience. They want to see that leadership early on in whatever role it may be. The schools that may value more work experience -- let us say European programs -- they are generally going to lean more on your full-time work experience. When I applied and was accepted to UCLA Anderson, I had only been working for 18 months (post graduation). I know they leaned heavily on my undergraduate work experience, which totaled about 2 1/2 years. I went to an engineering school that required me to co-op six months out of each year. That really did make a leg up since I was such a young candidate.
