Thank you for the follow-up post, and apologies for the delayed reply as I was off getting married!

If your story is told correctly (i.e., your best self comes across), then I think schools will see your potential. And I do think that it’s worth applying to Kenan-Flagler and others, including more highly ranked schools if you’re interested. A smart school strategy includes some reaches; after all, you want to test the upside of where you can get in. Harking back to my original response, and seeing some of those lower grades, I do think it would be worth patching some of them up. The framing of your various jobs — for total clarity and optimization — will also be very important given that you have more of a non-traditional patchwork. That will be true on your resume, in your essays, in your recommendations, and in the body of the application itself.
