I think B is the correct answer here.

A) SV agreement : The endurance and consistency(subject is quality of a person which should be uncountable)
B)Cal Ripken, known as the "iron man" modifies cal ripken correctly.

I am just wondering when endurance and consistency are the qualities of Cal then why we need plural verb because those two things are the qualities of the Cal

As you said, they are "qualities," not just one quality. So, it makes more sense to use a plural verb with them.
