A few points:
1. Your Amazon experience sounds compelling. Amazon operations is a challenging and meaningful job with lots of opportunities to take initiative, challenge the status quo and show real, quantifiable impact. Also, three years is good enough time to build up on your achievements. So you should definitely capitalize on this experience and mention stories of impact and learning in this experience, ISB's essays this year with focus on experiential learning and intellectual experiences will give you a good window to mention your examples.
2. I like the food truck business too, Again your experiences here will give you ammo for b-school essays
3. while your certifications won't hold much importance in admissions, but your volunteering work sounds meaningful - 2 years of volunteering at AMazon is good. what were your projects like? Were these related to initiatives for the Amazon employee community or were they external? Either way, you can glean some achievements from this experience and that can add towards showing consistent leadership capability.

Hi @quianihil,
as has already been detailed above, your WE and transitions across roles in Amazon, and then to your own entrepreneurial stint can be played well (although it would truly depend on how you demonstrated your food truck business as a career move).
Assuming the other factors in your Applications, esp the LORs are strongly drafted, I would still see it very difficult for you to achieve an impressive post-MBA outcome from ISB. In fact, I would strongly suggest you to look at a wider net, both to access scholarships, but also get you loans without collaterals from Top 20 programs.
