We know the mass of the non-water part is the same in the initial and final product, so we can equate them

let the weights of dates be, $$W_i$$ and $$W_f$$
and concentrations of non-water part be $$C_i$$ and $$C_f$$

since the mass is same,
$$W_i$$ * $$C_i$$ = $$W_f$$*$$C_f$$
$$W_i$$ * 10 = $$W_f$$ * 72
$$\frac{W_i}{W_f} = \frac{36}{5}$$
Thus, $$W_f$$ = 5 kg

fresh dates = 90% water and 10% weight
dry dates; 28% water and 72% weight
so 36 kgs of fresh dates has 3.6 kg weigh
.72*x=3.6
5kgs
