I'm a bit of a newbie here. I'm seeing lots of great posts, documents, and videos here on both strategy and material that are 4, 5, 6 years old. I know the IR section is different, but for the bulk of verbal and quant, are the old resources just as good as new?

Nothing much has changed on the GMAT on Verbal and Quant as such. However, you will still need to refer the updated material. For example, the GMAC, the company that administers the GMAT, has said that in sentence correction it is increasing its focus on "meaning" type of questions-in which two or more options maybe grammatically correct but one conveys the appropriate meaning while the other doesn't.
Similarly,in Critical reasoning, till a couple of years back, the GMAT didn't test you on boldface type of questions(reflected by the fact that you won't find these questions in OG10,OG11), but now they appear regularly on the GMAT and you will see quite a few of them(9 to be precise) in OG13. Similarly, OG13 has 13 "Provide a Logical Conclusion" type of questions which were rare in OG11 and OG12.
So you will be much better off if you use the latest book/resources especially the official guide.
