Sorry, IIM's and Indian programs are not my strength 😥 but I think your goals make sense. I would encourage you to poke around the LinkedIN and recruiting job portals on the consulting companies to see what they have in the data science and your qualifications in terms of hiring and what do they require. I think MBA is going to be helpful either way but you may find opportunities do not really extend to MBA's or perhaps the other way around. Hoping we can get some consultants with IIM experience to comment further.

Thats some relevant experience and skillsets that you have developed in your current consulting gig. Having worked with most top tier consulting firms in the capacity of their client, I can rest assure you that almost all of them are beefing up their data science and digital capabilities given they are becoming more crucial for clients particularly to make data backed decisions. Consulting firms off late are recruiting talent with those skillsets and thus you maybe a very good fit for this new mandate of theirs.
Coming to your profile, you have a decent GPA, very relevant work ex, some unique skillsets and exposure to dynamics industries due to which your profile will be pretty competitive for the list of schools that you have shortlisted. Would stress on giving the GMAT a good attempt and cracking the 720 level to have a good chance at the above mentioned. Since your profile is very brief, would encourage you to evaluate your leadership and management experience thus far as they will be critical for any mid career MBA program.
