Academic trajectory impacted by a change of major, significant work commitments throughout college, and a documented health-related semester disruption (including some zero grades affecting GPA)
Test Score:
GMAT Focus: 675 (Q86, V85, DI80)
Professional Experience (Internships):
(i) Machine Learning Intern at an international startup (team across Spain, USA, Canada)
(ii) Big 4 Consulting Intern
(iii) Asset Management Summer Intern at a leading Brazilian bank
(iv) MBB Intern
Extracurriculars & Leadership:
(i) Leadership role (2 years) at a blood donation NGO, coordinating donation campaigns in partnership with major Brazilian companies
(ii) Awards in national consulting and finance competitions
(iii) Winner of an international challenge (teams from Peru, Chile, Brazil, and China), with invitation to present final recommendations in China
Letters of Recommendation:
(i) Principal at MBB
(ii) University professor (former MIT faculty), undergrad paper advisor
Questions:
Do I have a realistic shot at M7 DEFERRED MBA programs? If so, which schools would be a fit for my profile? If not, would a higher GMAT score materially improve my chances, and what score range should I target?

The MBB internship w/ FT offer (assuming you joined them) would help you in your professional brand value
While your low GPA would cause challenges, 705 is not exactly a stellar GMAT to offset that.
I would also want to know more about the professional accomplishments at your internships.
So, DEFERRED programs would consider your candidature strongly; and while Wharton & MIT may be on the stretch side, to be safe you should also apply to Darden & Emory (both Consulting heavy) and Tepper as well.

You are a strong deferred MBA candidate with internships at fintech, Tier 2 consulting, and an MBB offer. Your leadership at an NGO is a plus. The GMAT Focus 705 is decent.
The biggest concern is your GPA 7/10, which is below average for these schools. You need to show strong academic rigor in quant-heavy courses or additional certifications.
Wharton and Sloan will scrutinize the GPA more, while Kellogg may be a bit more forgiving. You have a real chance if your essays highlight leadership, clear goals, and impact beyond internships.
