What the GMAT tests almost as much as the material covered on it is time management, so it's definitely important to practice at a set speed. When you're doing practice problems, make sure to work with a stopwatch, and give yourself two minutes per problem.
As others have said, however, you won't be able to improve your speed until you have a better understanding of the content that's being tested. In this way you'll be able to identify the problem and use your knowledge to answer it quickly as opposed to spending time figuring out what the question is actually asking you to do and what you need to do to answer it.
