What is the standard etiquette for sending thank you emails after info sessions/fairs?

I've always sent a short thank you email to whoever I talked with after info sessions/fairs when I received a business card or an admissions members email, but a few times I've forgotten to ask for one or gotten a generic mailbox. Sometimes their information is listed in a staff directory, but not always.

If I can do some additional searching around and find their contact information elsewhere would it be appropriate to email them a thank you note? Could this be seen as too prying, since they didn't give me their information?

I don't want to overstep any boundaries, but I also don't want to miss doing something that is expected of good candidates.
