A. seen to be underlying social systems, for example in --- seen to be is unnecessarily makes the choice wordy. If something is underlying, it is underlying. There is no need for that to be seen to be underlying.
B. underlying social systems such as -- no unnecessary words. Correct choice
C. that are underlying social systems including --- that are underlying is again unnecessary
D. underlying social systems including those in ----including those in is unnecessary – 'such as' is the Standard English usage for examples. It is not clear whether ‘those in’ refers to then Social systems or the structures.
E. that underlies social systems such as --- structures that underlies is SV number error.
