don't think there is any need to do the challenges, if you do the 1000.
start with OG 11, then go for OG math/verbal, if you are scoring well, go for kaplan 500, practice with gmat prep and powerprep software.
practicing everyday should be enough.

I might just skip the OG guides alltogether (except for the last 50 questions on each section). I can nail the medium questions but when I take the practice exams I notice they are much harder. So for math I will probably just focus on the 1000 questions and challenges.

If you have time, go through ALL OG questions. The first 100-150 questions are sometimes unrealistically easy, but if you learn a few different types of questions, may be it is worth going through it.
It took me no more than 3 hours to do the first 100-150 questions in OG. I mean, it wont take too much time.
