Any of the forums on GMATClub, although verbal would be easier to hide. For math, there are Sackmann's math problems (in PDF), GMATClub tests, and MGMAT online CAT's. The quant material, though, will require a pencil and paper.

I would agree though it may be tough to remain looking like you are doing your work.
It is hard to think of something very productive, esp when you are at a risk of being disrupted by colleagues or heaven forbid the boss.

I have to say I took a math test once at work during lunch and it went Ok.
You could use flashcards if you wanted to (print them on paper)...

I would suggest Ready4Gmat and Veritas mobile application.
Ready4Gmat
Comes with flashcards which will help you learn the basics.
It has numerous questions and explanations.
It also shows a progress on the topics covered and calculates score based on the problems done.
Veritas:
It has a huge collection of questions in the question bank.

These are mobile apps which you can conveniently use at free time at work.
