I self studied knowing that I am not the greatest at sticking to my own timelines. I was thinking I would score somehwere in the mid 500's at worst based on practice exams and my practice problems. I studied for around 2.5 months and went to a free weeekend prep course. During the actual exam I thought I was doing okay and was shocked when I got my score and it was a 440. I would like to score somewhere in the 600 range to get into the certain programs I have targeted. I realize I should probably invest in a prep course and am interested to see what people think as far as if it would be that big of a help for me. I live in the Dallas, TX area and have narrowed my choices for a prep course down to Veritas Prep or Mahatten Prep. I have read all kind reviews on this website as well as other but does anybody have a review specific to the Dallas area with regards to these two courses or any others????

You can go from a 440 to a 650, many people on this forum have done it. Read the stories in the GMAT Experience section.
You will struggle to find a review specific to a certain area such as Dallas, these courses implement a single curriculum so the courses will be very similar wherever you attend them. Regarding Veritas vs Mannhattan, I would recommend you trial their classes with the free online trials they give from time to time and see which you prefer.

In person will always vary from the online program as some people prefer in person interaction (as opposed to virtual interaction).
People have gone from 400+ to 700+. You are your limit on improving your score.
Both programs have rock solid reviews and rock solid staff. I've met people from both companies and both are fantastic.
