I am curious as to what I should do outside of the GMAT to improve my chances (accomplishments, extracurriculars, nonprofits?, etc.).

You're ultimately asking Admissions questions, so you would likely find it beneficial to speak with an Admissions Expert about your overall profile and plans. There's a Forum full of those Experts here:

There are steps you can take to improve on the 'academic side' of your application. While there's not much that you can do to significantly raise a 2.9 GPA, there are still ways to prove that you have academic strengths beyond earning a high GMAT Score. Certain undergraduate classes/knowledge matter a great deal in MBA Programs, so if you were to take those classes (re: Calculus and/or Statistics) and earn a top grade in each, then that would provide proof of who you are as a thinker NOW. You might even plan to take those classes in a few years (when you're closer to your planned application dates).
