Based on the order that you took your CAT/mock, you should have had the options to take your 2 breaks after the Verbal section and after the Quant section (NOT after the IR section). The breaks occur during the Exam at approximately 1-hour intervals (so for example, if you begin your GMAT with the AWA and IR sections, you would have your first break after the IR section - since you have tested for approximately 1 hour at that point - then your second break would occur after whichever section you take next - since that too is approximate 1 hour). While you have the option to choose the Section Order on Test Day, the two breaks are at fixed points in each option, so you don't get to choose when the breaks occur (although you do not have to take the breaks if you don't want to; to be clear though, you SHOULD take both breaks).
Before I can offer you any additional advice for your studies, it would help if you could provide a bit more information on how you've been studying and your goals:
Studies:
1) How long have you studied? How many hours do you typically study each week?
2) What study materials have you used so far? What “brands” of CATs/mocks have you used?
3) On what dates (or approximate dates) did you take EACH of your CATs/mocks and how did you score on EACH (including the Quant and Verbal Scaled Scores for EACH)?
Goals:
4) What is your overall goal score?
5) When are you planning to apply to Business School and what Schools are you planning to apply to?
