How many difficult questions (questions similar in difficulty to the 'Difficult' question set in the OG) come up in GMAT for a score of 700+?

As this is an adaptive test, It depends on the performance. But I can say one thing If you are aiming for Q90 or so then approx 1/3 would be difficult.

The number of difficult questions you encounter on the GMAT depends on how well you perform throughout the test. For a 700+ score, you’ll likely face a majority of medium and difficult questions, especially in the latter half of each section. Typically, 60-70% of your questions will be in the difficult range if you are performing well.
The GMAT's adaptive nature means that as you get more questions right, it serves you harder ones. To maximize your score, focus on mastering difficult-level questions from the Official Guide and simulating test conditions during practice.
