Hi guys,
Since interviews for certain schools are NOT blind (e.g. Harvard), does anyone have thoughts on whether it is better to discuss experiences NOT included in the application if there is a choice (i.e. to give a more all-rounded picture/give more information) or is there really not a difference
There's a big difference. If you just re-tell stories and information that's already in your application, you will not have provided any new information on why you should be admitted. You will have pretty effectively just wasted that hour in front of the adcom by telling them things they already know.

On a related note, for resumes for interviews - should we put info like GPA and GMAT that I omitted since I assume the interviewer will not have access to my application?

No. The interviewers generally aren't evaluating you on your GPA or GMAT scores, so there's no benefit to telling them what they are. Interviews are used to provide new and deeper info about candidates to the adcom, not provide factual information that the adcom already would know.
