1. Does having straightforward career goals like Management Consulting or Investment Banking sound dull to the adcom? How important is it to craft unique career goals?
It is important to craft goals that are authentic to you, so you will want to craft your goals from that line of thinking. Also, the goals above are often ST goals, a lot of people with these goals get a bit more creative with their LT goals. Another approach is to back some personal underlying passion or interest that is driving your goals to spice things up

2. How specific do I need to be about my goals? Apart from mentioning intended industry + function + location, is there anything else that is required?
Be as specific as you can, that is basically it many programs will also want to know your underlying motivations for your career goals

3. Although I have a few passions, several career options will allow me to pursue them. Is it possible to say that I am undecided on a post-MBA goal and that I want to use the MBA to deepen my understanding of these career options and then select something later?
No, you need a clear career goal, you're going to do yourself a disservice by not taking the time to identify your career arc prior to applying
