I'm a software developer hoping to attend an MBA program. I'm having trouble listing down my roles/tasks because they can vary depending on what I am doing.
Is it advisable to list down the projects I have worked on and note down the roles I played and accomplishments I attained?

Great question, resumes are a very key aspect of the application process and often get overlooked. For most admissions officers this is one of the first documents they look at in your entire package. So it is very important to put your best foot forward in this department.
To answer your question, I would say for someone with your type of work, the two most important things you should focus on is...
1)Structure
-Create a consistent framework for each entry, i think the structure you have laid out works well for your background
-I would also include a summary header for this job that describes your high-level position and use the subsequent bullets to outline your projects with the format listed below
2)Impact
-Really focus on the impact YOU have made, the structure you have outlined works, so make sure you are identifying your specific role, the context of the project and the results and if possible the results driven by your performance

Coming from a construction management background, I found myself with a similar problem. Instead of focusing on my projects, roles, and tasks, I focused on my impact and achievements. Think about what qualities you want to convey to the admissions committee. Then choose experiences that highlight those attributes. If you're like me, that will mean leaving some experiences off of your resume. I left off details that would have been considered critical for another construction position, but just didn't fit with the image I was trying to convey of an aspiring consultant. Less is more.
