GPA: 3.4
GMAT: 740 (Q48 V44 IR7 AWA6)
Senior in chemical engineering at a top 5 ranked undergraduate chemical engineering program in the United States with a minor in computer science.
Previous Internship experience as a process engineering intern at different industrial plants in "old-age" manufacturing fields. Think about things like pencils or hydrogen peroxide. A decent market but nothing insane and the companies also do not have large brand recognition despite revenues being over a billion dollars last year.
Started a company centered around a game to improve communications abilities based on work I have done as a former debater and have been developing it into a mobile application.
Have worked in a research lab and helped a local school district modernize their systems and improve their summer professional development workshops.
Am a competitive dancer, choreographer, stand-up comedian and have managed and run a $30,000 dance competition. Have also done and judged stand-up to raise money for marginalized communities.
Apps are due in around a week and I am working on essays right now and am not sure what to focus on. I have an interesting life story and goals with the mba, but full disclosure I am an Indian Male so my demographic isn't a very reassuring point. I am thinking about Stanford, Harvard, MIT Sloan, Booth and Columbia. Three of these (booth, columbia and mit) seem to be new with regards to a deferred program so I am not sure what to expect. Furthermore, I am not sure if I am competitive for GSB/2+2 (obviously my gpa is low relative to the averages so I am worried)
Any advice would be appreciated about how to craft the application or which schools I should be focusing on.

To be brutally honest your GMAT is above average of accepted students at any of schools on your application list.
You should not focus on being Indian male, not only you cannot change that but you have interesting and unique life story and extra curricular activities to convey in essay.
Focus on that.
Your app list is already great, I can only advise you to also look at top 10-15 business schools that have particular strength in area you want to pursue, if that is chemical engineering or whatever.
Dont target just top 5 in the world, have at least one "safety" option that is still very good solution toward your goals.
Even not knowing your desired specialization I can recommend Berkeley, UCLA, Stern, Cornell.
IMO, you have very interesting profile that will stand out and you have fair chance at schools mentioned, just add some back up option as well.
