IMO...A
The phrase "Focusing on issues such as poverty and touching on environmental issues" modifies "The sociology class"
Therefore C , D and E are out . B has a subject-verb agreement problem which leaves A as the only pick.

Okay ,
I take some of my thoughts back but I am still sticking to choice A.
I am discarding D and E because of awkward sentence structure . I think "it" in both the sentence is referring to "sociology class" and therefore there is no modifier error in these sentences.
