The correct construction here should be "not only has...but also offers"

(A) Incorrect construction as discussed above

(B) "some of them date back to the 18th century" is an independent clause which should be separated by a comma + fanboys

(D) Incorrect construction as discussed above

(C) (E) Close call between them as both are nearly the same and only differ in their usage of them vs. which. I have preferred option (E) largely because I think "some of which date back" in the original sentence seemed correct, so I extended that to consider "some of which dating back" correct as well but I am honestly super confused between these two.

ELiminate A, and D : Worng Idiom - Not Only (verb), but also (verb)
A. has not only a large number of books, some of which date
D. has not only a large number of books, some dating

B. not only has a large number of books, some of them date - Eliminate B - Tense Error
E. not only has a large number of books, some of which dating - Eliminate E, (which) wrong usage as a modifier

C. not only has a large number of books, some of them dating - Correct - Them refer to object - Books dating

THe parallelism isn't maintained in A and B not only verb ..........but aslo verb
THerefore A and D are out

THe modifier which should be placed closer to the object to be modified Therefore E out
'date' here acts as an infinitive verb not required 'dating' is the right usage

THerefore IMO C
