Your profile is quite unique, as you already have an MBA. Another interesting issue is that there is no work experience. The MBA might put you at a disadvantage, since you already have a graduate degree in a related field. Also, if it's alright to ask, how old are you? A number of MSc programs have a certain age range (under 27, for instance). And when will you receive your GMAT score?
Your list of schools is good, but look into Cass and LSE as well. In terms of placement, LSE and Warwick provide the best opportunity after graduation.
And a non-quantitative degree in finance is still going to be quantitative, so prepare yourself!

You finished school quite early! That's good. Your GMAT approach seems right, in terms of time. Trust me, a high score can make a big difference. Please do your best.
But at 21, you have quite a bit of time. It might be a decent idea to search for an internship or work for a year, maybe two. A big name company or NGO on your CV can also make a big difference.
LSE has so many programs, but this can work to your advantage. Different programs have different acceptance rates, GMAT averages, and so forth. The MSc Finance degree, for instance, has a 2.6 percent acceptance rate (last time I checked), but other programs offer much, much better odds.

Investment banking is hard to break into - even for those at top programs. So don't price yourself out. If a good opportunity presents itself, then take it. Admissions staff will be turned off if they realize that their MSc program is undertaken because there are no jobs for the applicant, so be careful.
As for other European schools, HEC has a good reputation and strong MSc Finance programs. They're tough as hell. Bocconi is known for its strengths in finance and economics. IE also offers a graduate degree in finance, but it's expensive. LBS has an amazing MSc finance degree, but it requires work experience. All of these institutions are known throughout Europe, so you should have a good chance of realizing your career goals over there with a degree from one of these schools. LBS and LSE, naturally, have the strongest global network and name recognition from the entire list.
