I am taking my first official GMAT on Sat Sept 10th. Just finished the basic "in class" Kaplan course on a twice a week basis.
(The CAT's don't give a score breakdown, just total and percentile)
Kaplan Diagnostic: 560 54% (q38%, v58%)
Kaplan Cat 1: 560 54% (q51%, v36%)
Kaplan Cat 2: 570 57% (q46%, v56%)
Kaplan Cat 3: 610 69% (q55%, v69%)
Kaplan Cat 4: 630 75% (q59%, v81%)
I still have three weeks to go and my goal is a 720. I also came across the score calculator on this website and have read on other forums that Kaplan's CAT's undervalue the scores by as much as 100 points. Not sure if this is accurate. Any feedback is appreciate.

It is NOT true that our scores undervalue by 100 points. Our tests are as accurate as we can make them! That said, no test-prep company has a perfect test-day simulation. You can take the official GMATprep tests from www.mba.com for an even more accurate assessment of your score.
In the end, though, even those mathematically accurate test won't necessarily tell you what you need to know. Test Day is Test Day. Many students find that the pressure of the "real thing" kicks them into high-gear and allowing them to out-perform their previous best scores, but some unfortunately find that they haven't quite mastered the stress-management strategies they need despite exemplary CAT scores.
In the end, what's more important is that you use your CATs as a rough guide of your progress, and as a tool to identify your personal strengths and weaknesses. Don't be obsessed with your practice test scores--just go in to the real test calm, confident, and ready to put forth the best test-performance possible.

Kaplan must have fixed their scoring system because my score was almost identical to my Kaplan scores. I had 740, 740, 760 and 760 in my four Kaplan CATs and 760 in the real GMAT. I thought my Kaplan scores were a bit inflated though because I did all the questions in the Kaplan book (some of them show-up on the CAT) and on the advanced kaplan book. I think Kaplan's quant is actually bit easier than the real gmat -- I mostly never missed a question on the Kaplan CATs -- but routinely got 3 or 4 wrong on the GMATPrep exams. I got 8 or 10 wrong on the MGMAT quant exams -- but that's a story for another day! Kaplan verbal questions -- especially SC and RC -- are excellent.
