Please advise me on which schools i should target with the given profile.
will the schools such as SDA Bocconi, HEC Paris, IESE Spain be a good choice to target?

Those are pretty fair schools given your profile and GMAT. Are you only interested in European schools? Or US schools too?

Yes, I am open to US schools too but, good ones look for a higher GMAT score than mine. Are there any schools in US for which my profile is good enough? Please advise.

Yes, I am open to US schools too but, good ones look for a higher GMAT score than mine. Are there any schools in US for which my profile is good enough? Please advise.

What I mean, is that that is a reasonable start (and not too ambitious and not too low) but that you need to put more schools on the US.
With a 680 there are plenty of GREAT schools you can apply to. Look at the US News and World Report rankings, and compare to see your GMAT (Basically schools ranked about 20-40 should be your range). And then you can select based on your other criteria.
