1. Yes, those are 100% valid reasons to go into consulting. The issue is you're asking about this in the context of getting into school. You have to take those reasons and personalize them several times over. They all have to relate to your long-term career goal. The schools know many go into consulting. The question is why is personally beneficial to you? What specific skills and experiences will you acquire by having a few years of consulting under your belt?

2. It make sense, but you have to recognize that these essays don't afford you a ton of time to explain every move. Yet at the same time, you have to explain your moves otherwise it raises eyebrows. If we were to work together, I would help you craft a narrative using both your main essays and your optional essay to cover your entire career trajectory in a smooth, clear and convincing way. The startup/entrepreneurial narrative could be potentially a good umbrella, but again must be very focused on you!
