Congrats - that's a pretty impressive offer and even more so impressive ability to defer your admission. That does not come around often, as most schools don't like offering that option.
If you are young, you like what you are doing (and want to keep doing it for a few years), and you have good likelihood of impressive LOR's and achievements, then by all means, keep at it - it does not sound like you need an MBA at this time and waiting is probably a good choice. You are likely to repeat or exceed your previous application results/offers. With more work experience during and after MBA, you are likely to land a more senior role while recruiting. E.g. having more work experience helps to set you aside vs. guys with 2 years and an internship.
If one of the above assumptions, is not true, you may want to think about taking advantage of your offer from Stern.
What's behind my recommendation:One concern about applying later is - LOR's and ability to demonstrate achievements in the last few years. It seems you have impressed schools in the past but if your career/achievements have taken a break or hit a plateau, it may be harder getting admission and scholarship. So, do you have growth on your resume and do you think you will get as good of LOR's as you did last time?
Your GMAT is probably good enough for a few more years, but what about your age? Not sure if you are aware of some of the age constraints. It is not a major thing/deal if you are 25 but if you are getting up to 30, that starts to be a major consideration.
Do you need an MBA even - that is always a good question to ask. It will come with setting you back 2 years in terms of income and if you are well off at the moment, maybe it is not worth the hassle. Worst case scenario, you can always do an EMBA when you are 35 if you really need it. No scholarship there but Stern will welcome you back with widely open arms.
