When is it appropriate to use "greater than" vs "more than"?
From what I could make out its if actual numbers, rates are being talked about its "greater than". If is the actual thing then its "more than"
eg.
The number of fish in this pond is greater than 100.
There are more than 100 fish in this pond.

But I think in general,
"more" can be used for both countable and non-countable items, but where "greater" seems to trump everything is when it refers to a number value of some sort.
Number values in this case can mean
- percentages
- fractions
- referring to 'number' itself

My rule is I associate multiplication with greater, and addition with more than. Simple math concept.
Percent, rate, etc are multiplication.
In your sentence above, they are both correct to me, but emphasize different thing. First one can be significantly more than 100, second one is just alittle more than 100.
