I'll go with (D) as well

Presque State Park has 5 and a half miles of sandy beaches and (so diverse are its forests and wetlands so) that some botanists say that it is one of the rarest places in the world.

Stripping the sentence:

X park has .. sandy beaches ... and (something so unique) ... that botanists ...

Let us examine (something so unique)

(A) "so diverse are its forests and wetlands so" - the last "so" spoils it completely. Otherwise, (A) was a legitimate option.

(B) "so diverse as its forests and wetlands are" - ruled out " so diverse as its ... " doesnt sound quite good

(C) "with so diverse forests and wetlands" would've been fine had that preceeding "and" not been present.

(D) "such a diversity of forests and wetlands " - Yes! This definitely sounds as a good replacement for "something" in the stem

(E) "of such diversity its forests and wetlands" - No explaination necessary.

late to the question. D is my vote. basically, the original passage drops the second "has" but the first serves to maintain parallelism.
