A) were so devoted to Aristotle that they neglected - Redundant.
B) were so devoted to Aristotle as to neglect

Hence B should be the answer.

Yes, A it is.
Idioms are OK, So X that Y and So X as to Y. But blunder is in tense.

So X as to Y

When characteristic X is so extreme in particular case that Y results

In this case philosophers were so devoted (extreme case) so they started believing blindly.

I would go with B

In the Middle Ages philosophers were so devoted to Aristotle that they
neglected
the evidence of their own senses and accepted whatever he wrote

A)
B) were so devoted to Aristotle as to neglect

What is the corret answer between A and B? I have not given other choices as answer is either A or B

It's A.
So....That is correct construction.
Moreover it is parallel. Observe below sentence:

In the Middle Ages philosophers were so devoted to Aristotle that they
neglected the evidence of their own senses and accepted whatever he wrote.

B!

A and B are OK , gramatically not flawed but B must be answer.
Meaning of the question Emphasizes the action.

AS TO = to the extent that. That's why "So .... as to " sounds good.
