I believe the correct idiom is "theory that" so I go with A as well.

I think "theory of" only works when you are referring to a specific theory (i.e. Relativity, Evolution, etc.) This example appears to refer to a generic theory and "that" tells the reader what the theory is.

I believe "theory that" is much better than "theory of"
And "lies at the center ..." is much clearer than " lies at the MW's center"

another A for me, imo

Additionally we need the "at the center of" construction and not the possesive form ('s) because otherwise the ellipsis would not be correct, right?

Please correct if I am mistaken
