I think it is E.

Trying to <bla bla bla> is singular. So, A & C are ruled out.

"If you run...., ....most difficult things you will ever have to do..." is parallel.

So, B & D are ruled out. Only E stands tall.

Paul
If you run your own business, trying to organize your activities, finances, and personal contacts are some of the most difficult things you'll ever have to do.

A) are some of the most difficult things you'll ever have
B) is one of the most difficult things one ever has
C) are some of the hardest things you're likely to ever have
D) is among the most difficult things a person ever has
E) is one of the most difficult things you'll ever have

E is OA. This was just a trap question for us to be careful about what the subject really is. "trying to" is gerund and verb should be conjugated with 3rd person singular
