There are many benefits to timing your practice, including:
Try taking the GmatPrep test (the official one from the mba.com web site). That is normally a good indicator of your currently level.
Kaplan results are very deceptive. This site is full of examples of people who scored below 600 in Kaplan tests but ended up with relatively high scores in the actual tests (including yours truly).

My GMAT Exam is just 1 week away. I am not able to increase my score more than 560 ( Princeton), 520 ( Kaplan)
Neither of these scores are going to help me get into a good school!! I am almost ready to give up at this point.
With only a week to go, i would focus on the area that is your greatest strength. It is easier to increase your overall score by focusing on your strength vs. your weaknesses. Also make sure not to burn yourself out during this last week.
Trust me, I was in the exact same boat. My only advise is once you take the actual GMATPrep test and still don't feel confident, reschedule. I had my original test date back on May 20th and was not doing well. I took 2 practice tests and scored 520 and 590. I rescheduled my test to July 9th and really focused on doing practice problems and working on my timing. If you have problems with time, go out and get a stop watch. It works wonders, I was using the stop watch on every problem and you really get a good feel for what 2 minutes really is.
