There are many benefits to timing your practice, including:
The method I've been following throughout my practice has been to draw four quadrants per page, and within each quadrant, list A,B,C,D and E down the left side. At which point during the actual GMAT exam will I be allowed to do this? For instance, will they let me draw these out while the instructions are being read, or do I have to do it during the 75 minute timed period?
If you want to take time to do this, you can spend time during the 2 10-minute breaks, or go deliberately slow through the instructions. There will be a timer at all times telling you how much time you have for everything.
I too use ABCDE on my scratch paper. I just use the break inbetween quant and verbal to write it on my pad. It normally doesn't take more than a minute to scribble down about 30 line's worth.
Number 1-41 columns across the top and A-E rows going down on the left side. As you eliminate answers, put an X in its location. For example, on question 2 you've eliminated A,C, and D...this means that there should be X in 2A, 2C, and 2D.
So you essentially have to use a portion of the break to do this? Will they bring me a new pad between each section so I can do it before I take my break? In other words, after my AWA I could get a new pad, as well as after my Quant?

You can request a new pad each break. I put the table on page 1. It takes 2 minutes to do it, you have 10 minute breaks. I made the table and ate food during the break.

Sounds reasonable. I just wanted to make sure I didn't spend 2 minutes to make my grid, go eat, and come back to a new pad.
