So it seems as if 2-3 hours is the agreed upon time for an effective, organic, study session.
1. Hypothetically speaking, what is the minimum amount of material that should be covered in this time-frame?
2. How much of this time is assigned for practicing problems?
For example, the book I'm using right now (Kaplan GMAT Math Workbook) is 6 chapters (315 pages) including multiple practice problems/tests....
How long should it take me to read/work thru this book? I figure 1 month...100 pages a week? 1 chapter a night? I set aside 1 month extra to brush up on Math.
Any insight will be appreciated. Thank You.

It will completely depend on your baseline and background. At the beginning you can expect to spend more time brushing up on fundamentals and you may not spend any time doing problems. At the end, you may spend that whole time doing practice tests. I'm pretty impatient, so I couldn't stand to read through the actual chapters, I went pretty much straight to problems. I would say I was probably almost half and half - half the time spent doing problems, half the time spent reviewing problems I'd gotten wrong.

I used the Kaplan Math Workbook as well. I took a meticulous approach and spent 3 weeks on Math.
Keep in mind that Kaplan does not have probability or combinations covered very well. If you are just trying to get by, that's a great book - I loved personally, but for a 48+ math score, you may need something more potent.
Most common mistake everyone makes - jump into tests. If you can take the approach of chapter by chapter, you may be better off than taking full blow gmats but that's my subjective opinion
P.S. 2 hours in the morning are much better than 3 hours at night after dinner.
