The school that I've applied to doesn't live and die by the GMAT. (thankfully, but there are other areas of the application that are much more time intensive)
I was told the average score is in the mid 500's. The admissions counselor said not
to study more than 6 weeks. I have a little over 3 weeks until the exam.
I've been through Cracking the GMAT and a few OG's.
I'm taking a full length test tomorrow. (it's hard to set aside such a large chunk of time)
I'm working in the yellow OG now and am using the tests/challenges from this site.
Any recommendations on how to finish strong? I've pretty much planned
20-25 hrs of study time per week.

I agree with kidderek, the OG11 and GMATPrep tests are essential. I would suggest taking more full length timed CATs as you get closer to your test date. That should help improve your pacing and concentration. I know it's hard to set aside so much time, but if you're budgeting 20-25 hours a week then it shouldn't be that difficult.
