My sense from reading your post is that your activities will be viewed as valid general experience but probably not "professional work experience" in the MBA realm. As you have probably seen in your research, the prototypical work experience for MBA admissions officers is a full time position. Of course, you can still draw on this experience in the essays to show your maturity and ability to interact with executives.
