Hi Hjort -
I have a relatively weak academic quant background as i was a liberal arts major. I do have some quant work experience, but quant grades are low and quant gmat wasn't great (44 Q 710 total).
I'm thinking of using the optional essay to briefly explain low Quant GPA and was thinking of making it clear that i would be willing to take a course or two this spring/summer prior to admission if they feel that i need additional work in Quant areas. Is it worth mentioning my willingness to take this step in an essay, or should i leave it out?

I think it is worth mentioning in passing that you plan to take these courses over the summer. Of course, it would be even better if you had already taken them recently and received high grades . . .
