Yes, visa processing can be complicated and time consuming and this is usually the reason for the earlier application date for students requiring a visa.
I do agree that Columbia and Stanford have high GMAT score averages. However, as I recall, the GPA distribution for these schools is shifted to the right of the distribution for the schools I mentioned. Thus, the elite schools seemed a more logical place to look but there is no problem looking more closely at these ultra elite schools as well.
