There are many benefits to timing your practice, including:
Can you take the GMAT two days before your application deadline and report the numbers you got on the application?
The school will eventually receive the official scores later on (20 days?)
or do you have to submit official one before the deadline?
You have to clarify this with the school. Some schhols want the official score to be available before the deadline; some just require that you *take* the GMAT before deadline, no matter when the official score arrives.
Unofficial score is the printout you receive on G-day. Official score arrives in about 2 weeks by email, or snailmail, or both. Check with your school if it's OK for them to get just a self-reported score before deadline, and receive an official report a bit later.
