Congratulations on your admit from IIMB EPGP. I know many people personally who have graduated from that program and have joined both consulting and finance roles. I also know people from ISB who have not been able to make it to such roles.
Long story short, both IIM and ISB are tier-1 B-Schools and will open up opportunities for you post MBA. Both are strong brands in the world of Business especially in India, and while there is always a risk since no B-School guarantees the right placement for you. I believe you should take up your admission offer and focus on pursuing what you have in hand rather than going in a different direction now.
Also to answer your question on point, 2-3 years post-MBA, the recruiters will NOT give as much weight to a B-School brand name as much as they will give to you achievements in your post-MBA career.
So from that perspective as well, and as an overall recommendation I would say you already have a strong offer in hand and just run with it and give the program your best shot!
