I suggest analysing both the mock tests and focusing mostly on your weak areas for the next 2 weeks. Take a mock test after every 3-5 days of study (and analyse it) so you can track your progress and plan for the next 3-5 days accordingly.

Q49 is a great score, and Manhattan CAT's quant is considerably harder than GMAT. So 80% of your focus should be on verbal. You need a V38 to cross 700.

What books are you using for verbal?

What metrics can I track for progress?
Normally, with two weeks to go, it's execution that we need to focus on, so I wouldn't worry about tracking any metrics other than practice test scores and time management at this point. There could be many other things going through a test taker's mind at this stage, but we should (try to) focus on things we can control.

2 Weeks to go for GMAT!! Study Plan needed

There's a gmatclub study plan post you may want to check out. 2 weeks may limit your options but one thing you may want to leverage are the Official Mocks from the mba website. If you feel SC is a weakspot, perhaps download the idiom list from the GMAT Knight blog.

To improve your quant and verbal skills, you may find it helpful to engage in focused practice of each individual quant topic. For example, let’s say that you want to practice Number Properties. You can do so by answering 50 or more questions just from Number Properties: LCM, GCF, units digit patterns, divisibility, remainders, etc. As you do such practice, do a thorough analysis of each question that you don't get right. If you got a remainder question wrong, ask yourself why. Did you make a careless mistake? Did you not properly apply the remainder formula? Was there a concept you did not understand in the question? By carefully analyzing your mistakes, you will be able to efficiently fix your weaknesses and in turn improve your GMAT quant skills. Number Properties is just one example; follow this process for all quant and verbal topics.

I wrote an article that you may find helpful that has some more advice regarding how to treat the final week leading up to your GMAT as well as some tips for test day.

Before I can offer you the specific advice that you’re looking for, it would help if you could provide a bit more information on how you've been studying and your goals:

1) How long have you studied? How many hours do you typically study each week?
2) What study materials have you used so far?
3) On what dates (or approximate dates) did you take EACH of your CATs/mocks?
4) What Schools are you planning to apply to and what specific application deadlines are you facing?
