Test Day is a rather specific 'event' - the details are specific and they matter, so you have to train as best as you can for all of them. The more realistic you can make your CATs, the more likely the score results are to be accurate. The more you deviate, the more "inflated" your scores can become - and that's likely what has happened here. By skipping sections, taking longer breaks and anything else you may have done that was not realistic, you weren't properly training for the FULL GMAT 'experience.' This is meant to say that it's highly likely that all of these CAT scores are inflated and unrealistic. Depending on your score goal, you might want to push back your Test Date so that you can give yourself the necessary time to properly train to face the FULL GMAT.
For your next CAT, you should use one of the Official GMAC CATs. Make sure to take the FULL CAT (with the Essay and IR sections), at the same time of day as your Official GMAT, take it away from your home, etc. Once you have that score, you should report back here. Beyond that advice, it would help if you could provide a bit more information on how you've been studying and your goals:

Sorry for answering just now.
So I just took the GMATPrep1 test under official conditions. AWA and IR included, 8 minutes breaks and not pausing the exam.
Here are my results:
Total Score: 700
Quant Score: 49
Verbal Score: 36
IR Score: 7
Pleasantly surprised by the results and the score was a little unexpected, since the other tests I took without respecting the official conditions, my best score was 680. Maybe I was more focused under these conditions, which might have helped. On the other hand, the questions seemed less challenging than in previous tests, especially the Manhattan tests, which have been the most difficult in my opinion.
Is GMATPrep1 easier? What to make of this result?

3) Most Master's degrees which I'm looking to apply for only require a 600-630 score, but wouldn't mind a better score since I might pursue another degree after my Master at a school demanding a higher score. So pretty much targeting the highest score possible.
4) in April/May but starting an internship soon so I don't want to be done before that starts, so I'm planning to take the official test Thursday next week.
